Next week, the subject will be pork at the third annual Swine and Dine festival. Come and celebrate all things pigtastically tasty, with expert butchers and cooks descending on the Island.

The event is actually a full week of adventures and experiences, beginning with Porks and Knives, a four-day immersion for professional butchers and chefs and farmers to get down in the trough, so to speak, including covering the finer points of slaughtering, smoking, rendering pigs, plus farm tours, too.

Then on Friday and Saturday the event opens up to the public so everyone can taste the results of the week. There’s a smoke-out at the Harbor View Hotel on Oct. 31, featuring all-you-can-eat pulled pork by the Vineyard’s own Local Smoke. The grand gala is on Nov. 1, also at the Harbor View, from 4:30 to 6:30 p.m., and features a four-course meal, the result of all the hard work during the Porks and Knives seminars.
