It’s time once again to go whole hog at the Porks and Knives class billed as Four Days of the Pig: From Slaughter to Butchery and Beyond.

The pork party begins on Tuesday, Oct. 27 and runs through Halloween. The class breaks down into the various specialties that go into the journey to prepared a live pig for the plate. Day one — slaughter day; day two — break, de-bone, head cheese, lard and smoking; day three — grinding, terrines and smoking; day four — farm tour and the heritage pork grand gala meal.
