Rickard’s Bakery wants to open a new store on North Summer street in Edgartown by mid-January.

The Vineyard Haven bakery is set to go before the Edgartown zoning board of appeals next Wednesday night, Dec. 8, to apply for a permit to operate a commercial kitchen in the condominium storefront in the newly built Summer street complex across from the Second Hand Store. The condo was recently purchased by Gates and Kate Rickard.

“We want to deliver as fresh a product as we possibly can,” Mr. Rickard said this week. He said they plan to prepare ingredients in Vineyard Haven and do bread baking at the Edgartown location. “We will have a couple ovens in the basement and will be expanding a little by doing lunch, soups and salads,” Mr. Rickard said.

He said if it wins approval, the new bakery will stay open year-round. Plumbing and electrical work remains unfinished until a permit is secured. The Rickards have backed a small letter-writing campaign to the Edgartown zoning board by providing stamped and addressed envelopes for customers who like the idea of a second store.

“I don’t think there’s any reason for them not to let us do it,” Mr. Rickard said. “But it’s particularly important for the people from Edgartown to support us.”
