Cook Moroccan
Dinner goes global this week when Jan Buhrman of Kitchen Porch Catering in Chilmark demystifies Moroccan cooking on Wednesday, March 12, at 5:30 p.m. at Chilmark library. The title of her free cooking demonstration is Moroccan Staples and Spices: Preserved Lemons and Tagines.
Ms. Buhrman will show how to prepare preserved lemons, a staple ingredient of Moroccan cooking, and how to use the lemons in a variety of traditional Moroccan dished dishes including tangines, a slow-cooked dish of meat, fruit and vegetable. The term tangine refers to both the type of stew and the traditional shallow clay pot with a cone-shaped lid used in Morocco.
