Is your cream sauce lumpy? Does your hollandaise curdle? Head for the Chilmark Public Library’s free winter cooking classes, Mastering the Art of French Sauces.
Featuring Le Grenier’s Jean-Marc Dupon, the series will begin Wednesday, Dec. 3 at 6 p.m. at the library.
Each class will include a demonstration, tasting and recipes for a different, classic French sauce. Mr. Dupon will demonstrate how to perfect the basic sauce, and how to adapt it with herbs, spices and other magic.
The December lesson is about cream sauces. The series continues on Wednesday, Jan. 7, with egg-based sauces, and concludes on Wednesday, Feb. 4, with demi-glace sauces.
Jean-Marc Dupon has been affiliated with the Island’s premier French restaurant, Le Grenier, since it was opened 26 years ago in Vineyard Haven by his father, Jean Dupon. The restaurant has received numerous awards from publications such as the Cape Cod Travel Guide, Zagat Survey, Cape Cod Life and Martha’s Vineyard Magazine. Le Grenier remains open year-round seven days a week.
